| Favorite Crock Pot Chili (Serves 10)
This big batch chili tastes as good as it sounds. Chuck full of tasty ingredients, this recipe is certain to bring you crock pot out of hiding.
1 pound lean ground turkey or beef
1 medium green pepper, finely chopped
1 small red onion, finely chopped
3 garlic cloves, minced
1 (28-ounce) can diced tomatoes, undrained
1 (15.5-ounce) can kidney beans, rinsed and drained
1 (15.5-ounce) can black beans, rinsed and drained
1 (14.5-ounce can or 16-ounce box) chicken broth
1 and 3/4 cups frozen corn, thawed
1 (6-ounce) can tomato paste
2 teaspoons beef bouillon or 2 beef bouillon cubes, crushed
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon ground pepper
Options toppings: sour cream, grated cheddar cheese and/or minced fresh cilantro
1. In a large skillet, cook the ground turkey or ground beef, green pepper, onion and garlic over medium heat until meat is no longer pink; drain. Transfer to a 4-quart slow cooker.
2. Stir in the tomatoes, kidney beans, black beans, broth, corn tomato paste, chili powder, cumin and pepper..
3. Cover and cook on low for 4-5 hours to develop flavors.
4. Serve with toppings, if desired.
