| Chocolate Turtle Waffle Cookies
(Makes 2 and 1/2 dozen)
Is your waffle iron rarely used? Here is a great idea for it. Call all the kids together and mix up a batch of these tasty chocolate cookies. Warm from the waffle iron, they are great with ice cold glasses of milk.
1 and 1/2 cups sugar
1 cup butter or margarine, softened
4 eggs
2 teaspoons vanilla
2 cups flour
1/2 cup unsweetened cocoa
1/4 teaspoon salt
1/2 cup chopped nuts, if desired
1. Cream together and mix well sugar and butter.
2. Break eggs into small bowl and beat into sugar mixture one at a time with a wooden spoon. Beat in vanilla.
3. Sift together flour, cocoa and salt. Stir into egg mixture until well blended.
4. Spoon rounded teaspoonfuls on hot waffle iron (one per section). Bake 1-2 minutes until done and then remove to cooling rack.
