Pumpkin Chocolate Chip Cookies (Makes
4 dozen)
These flavorful moist cookies have pumpkin to thank for their tender
texture. The addition of chocolate chips pushes them right into the
family favorite category.
1 cup butter or margarine, softened
3/4 cup brown sugar
3/4 cup sugar
1 egg
1 teaspoon vanilla
2 cups flour
1 cup quick cooking oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup cooked or canned pumpkin
1 and 1/2 cups semisweet chocolate chips
1. In bowl, cream butter with brown sugar and sugar.
2. Beat in egg and vanilla.
3. Combine the oats, baking soda, cinnamon and salt; stir into creamed
mixture alternately with pumpkin. Fold in chocolate chips.
4. Drop by teaspoonfuls onto parchment-lined or greased cookie sheets.
5. Bake in preheated 350 degree oven for 12-14 minutes or until lightly
browned.
