Calypso Pork and Beans (Serves 4-5)
Pork tenderloin is a favorite protein source for heart healthy main dish
recipes. In this creative skillet meal, it’s teamed with beans and
salsa for a delicious entrée.
1 pound pork tenderloin, cut into 1-inch pieces
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
3 tablespoons olive oil, divided
1 cup julienne strips of red pepper
3/4 cup chopped onions
1 (15-ounce) can cannellilni or great northern beans, rinsed and drained
1 cup salsa, mild, medium or hot
1. Place the pork in a mixing bowl; sprinkle with chili powder, cumin and salt. Toss to coat. Drizzle with 1 tablespoon olive oil; toss to coat.
2. In large skillet, brown pork in remaining 2 tablespoons olive oil over medium heat for 5-6 minutes or until no longer pink. Remove and keep warm.
3. In the same skillet, sauté red pepper and onion for 3–4
minutes or until crisp-tender.
4. Stir in beans, salsa and pork; cook for 3–4 minutes or heated through.
