Barbecued Chicken Chunks (Makes 4 servings)

Whenever I have a pound of chicken breasts or tenders, this is the quick and easy recipe that I like to prepare. It doesn’t take long to have this entrée ready for hungry family members and friends.

1 pound boneless, skinless chicken breasts or chicken tenders
Vegetable oil spry
1/4 cup barbecue sauce
1/4 cup all-fruit marmalade or spread, such as orange, apricot or plum
1/2 teaspoon ground ginger

1. Cut chicken into bite-size pieces.

2. Spray large skillet with vegetable oil spray.

3. Add chicken and cook for 3-4 minutes, or until it is no longer pink, stirring once in a while.

4. Stir in barbecue sauce, all-fruit marmalade and ginger.

5. Cook and stir until heated through, about 2 minutes.
