Citrus-Waldorf Salad (Serves 4-6)

This delightful gelatin salad recipe was given to me by my friend Linda Kanamueller of Kalamazoo. It’s so easy and very delicious.

1 (3-ounce) package lemon flavored gelatin
2 cups apple juice or cider, divided
1/2 cup diced celery
1 cup chopped unpeeled apple
1/2 cup chopped pecans

1. Dissolve the gelatin in one cup boiling apple juice.

2. Stir in the other cup of apple juice.

3. Chill the mixture until it is the consistency of egg whites.

4. Add the celery, apple and pecans. Mix gently.

5. Chill until firm. Serve.
