Fruit Cups (Servers 20)
If I were to choose one make ahead recipe to keep stored in the freezer
for summertime guests, these frozen fruit cups would be my choice. They
are equally delicious when served as a salad, snack or dessert. Here
in Michigan I purchase cups of various sizes and lids at Gordon Food
Service.
1/3 cup sugar or Splenda
3/4 cup thawed frozen orange juice concentrate, (6 ounces)
3/4 cup thawed pink lemonade concentrate, (6 bounces)
1 (10-ounce) package frozen raspberries, thawed
1 (16-ounce) package frozen strawberries, thawed
1 (20 ounce) can crushed pineapple in its own juice
1 (12-oz.) sugar free or regular ginger ale (1 and 1/2 cups)
1. In large mixing bowl, combine sugar, orange juice concentrate, pink
lemonade concentrate, raspberries, strawberries, and pineapple. Stir
until sugar dissolves.
2. Add ginger ale; stir gently. Pour into 4 or 5-ounce paper or plastic
cups that have been placed on a tray.
3. Freeze firm.
4. Store in resealable plastic bag or other airtight freeze containers.
5. Serve frozen.
