Applesauce (Serves 4-6)
Never again would I make applesauce on my conventional range when the
microwave does it so quickly and well. I have listed below a basic recipe.
Adapt it to your usual method and amount of sugar and spice.
For quantity applesauce fill any 3-4 quart microwave-safe casserole
half full of peeled and quartered apples. It is important to use a large
casserole and not fill over half full to avoid having the applesauce
boil over. Sprinkle with ascorbic acid fruit protector to retain snowy
white applesauce. I don’t add water. Just cover and microwave
on Full Power stirring every 5 minutes until tender. Mash with potato
masher and add sugar. No commercial applesauce can measure up to homemade
flavor.
6-8 medium cooking apples, peeled and quartered
1/2 cup water, if desired
1/3-1/2 cup sugar
1/2 teaspoon cinnamon, if desired
1. Combine apples and water in 2 quart microwave-safe casserole.
2. Microwave, covered, on full power 9-11 minutes or until apples are
soft, stirring once or twice. Stir in sugar and cinnamon.
